Recipe Roundup: Mediterranean Burgers, Pumpkin Smoothie, Buffalo Chicken Tenders, and Raw Pumpkin Balls

This week’s recipe roundup is all about the pumpkin. Better get ready to see a lot more in the coming months too, because pumpkin is my favorite fall ingredient.

For breakfast this week, we had Pumpkin Smoothies and Raw Pumpkin Balls. The pumpkin smoothies were delicious, just like drinking a pumpkin pie. We liked them so much that we made them for dessert too! The pumpkin balls were tasty, but I’ll probably look for another pumpkin bar recipe to try next time.



For our dinners, we had Spaghetti Squash Bolognese, Mediterranean Burgers, Ginger Garlic Salmon with Cabbage Salad, and Buffalo Chicken Tenders.

Our favorite this week was definitely the Mediterranean Burgers, they were probably the best burgers we have ever made. We used beef instead of turkey, and left out the cheese, but they were still amazing. The entire time we were eating we kept saying over and over, “I can’t believe how good these are!” The Spaghetti Squash Bolognese is another of our favorites. We’ve made this recipe before and will continue to make it often. Although we love anything that has to do with buffalo chicken, the Buffalo Chicken Tenders recipe was not our favorite. I think we will stick with the Buffalo Chicken Nuggets recipe I made a few weeks ago. We also loved the salmon, it tasted great with the cool, cabbage salad.
